The Department of Nutrition, Food Science and Physiology is an interfaculty department, having teaching responsibilities in the degrees of Medicine, Pharmacy, Biology and Nutrition and Dietetics. The Department is divided in three research areas (Nutrition and Dietetics, Food Science and Physiology).

Research activity in Nutrition and Dietetics is focused in the investigation of the relationship of Nutrition and Health with obesity, coordinated by professor Alfredo Martínez, Professor of Human Nutrition and Director of the Special Research Line in "Nutrition, Health, and Obesity". The main research lines are:

  • Studies on the lipid metabolism regulation in cellular systems (adipocytes) and on the regulation of body composition and energy metabolism in different animal obesity models (cafeteria diet).
  • Study of the relationship between inflammation and obesity in different experimental models (cell cultures, animal models and human nutritional interventions.
  • Identification of genes involved in diet-induced obesity by differential expression (RNA-fingerprinting/microarrays).
  • Development of human nutritional interventions to evaluate the utilization of energy substrates in normo and overweight individuals in body weight control with hypocaloric diets with different macronutrient distribution.
  • Study of the possible interactions between dietary / physical activity patterns and genetic markers of obesity, as well as the identification of polymorphisms in candidate genes.

The Department of Nutrition, Food Science and Physiology has been partner in different European-Funded consortiums in past editions, like DIOGenes, SEAFOOD Plus or NUGENOB.

The University of Navarra is involved in Food4Me's work on the internet-based personalised nutrition proof of principle study. The Food4Me team at the University of Navarra is led by Professor Alfredo Martínez.

Meet the University of Navarra scientists involved in the Food4Me proof of principle study.


J. Alfredo Martínez

Alfredo is Professor in Human Nutrition at the University of Navarra and co-director of the Institute of Nutritional Science at Navarra University. He is Principle Investigator for a portfolio of research projects in the areas of nutrition and Genetic. His work includes studies on Nutritional and Hormonal control in obesity and associated complications ; Nutritional utilization of functional foods; Evaluation of nutritional status in different populations; Interactions between Nutrition and genetics; nutritionally–oriented epidemiological surveys.

The raised budget is higher than 12 million of Euros in the area of Nutrition, Obesity and Health: cell, animal and human intervention and epidemiological/genetic studies. Also, in the last few years, Dr Martinez has acted as external reviewer for Research National Agencies in Spain, Colombia, Switzerland, USA, Canada, France and Israel. Alfredo has more than 40 years of experience in the field of human nutrition and lifestyle studies.

Role and responsibility in Food4Me

Alfredo leads the research team at the Navarra University responsible for running the Spanish arm of the Proof of Principle study within Food4Me.


Santiago Navas-Carretero

santiagoSantiago Navas-Carretero is pharmacist and PhD in Nutrition by the Complutense University in Madrid. At present he is research associate at the University of Navarra and coordinates the Metabolic Unit, where all the nutritional interventions are carried out. His areas of expertise are prevention and treatment of obesity and the metabolic syndrome through dietary interventions and the use of functional foods. He is also an expert in iron deficiency anaemia.

Santiago is a nutrition researcher managing the research team at the University of Navarra, carrying out dietary analysis and providing dietary advice to Spain-based Food4Me participants. The University of Navarra is responsible for running the Spain arm of the proof of principle study, a Europe-wide multicenter intervention trial.


María Hernández

mariaMaría is nutritionist and dietitian, developing her tasks at the Metabolic Unit in the University of Navarra. Her wide experience ranges from clinical nutrition, where she started her career, to the research area, where she Works at present. María has collaborated as research assistant in multiple nutritional intervention studies, at European and national level, mainly focused in overweight and obesity, metabolic syndrome, cardiovascular risk and functional foods.

María is a project dietitian, carrying out dietary analysis and providing dietary advice to Spain-based Food4Me participants. The University of Navarra is responsible for running the Spain arm of the proof of principle study, a Europe-wide multicenter intervention trial.


Blanca Martínez de Morentin

blancaBlanca has a degree in medicine and is dietitian-nutritionist by the University of Navarra. At present she develops her work at the Metabolic Unit of the University of Navarra, as research technician. She has wide experience as general practitioner in health promotion and education programs for diabetic patients. Her research areas are: the metabolic pathways of obesity and its comorbidities, nutrition research studies with stable isotopes and the research on functional foods for human health. She has experience in the design and development of nutritional intervention studies.
